Apple cider vinegar (ACV) became popular as a supplement in 1958 when D. C Jarvis M.D. published his famous book ‘Folk Medicine: A Vermont Doctors’ Guide to Good Health’ This book was so popular it reportedly sold 245,000 copies in one week alone.

Among other things Davis was promoting the ‘you are what you eat’ mantra which, even though this book is now 60 + years old, the ‘you are what you eat’ idea is still good solid basic advise.

Research

There seems to be no reliable research into ACV and weight loss which isn’t surprising as it is a natural product and that is not where research dollars lie. However there was a study done by researchers at Arizona State University which found taking ACV does have a positive effect on blood glucose levels.

This may be why some of our clients don’t have the same problems with sweet cravings when they take a teaspoon of ACV in a large glass of water once a day. It is also a natural remedy for heartburn and there have been reports of it being good for acne. But maybe these are just old wives tales.

Dressing Anyone?

If you prefer not to do the ACV drink you may like to use it on your salads and in cooking, because as with all things on the DietDitch program, moderation is the key. So if you have a choice between having a creamy mayo or some ACV with a little olive oil on your salad or coleslaw please choose the latter.

Why?

Well a ½ cup of ACV will set you back about 25 calories while ½ a cup of creamy mayo can contain up to 800 calories. So it is a no brainer – go for the vinegar every time. And in cooking, adding a splash of any vinegar will add to the taste and dramatically reduce the need for salt in the dish. Caution: Please consult your doctor for possible contradictions if you are taking medications. ACV must be diluted using the ratio 1 x teaspoon to 1 x 8 oz glass of water when used as a beverage.
