What better way to warm up in winter than with some of natures comfort food and these baked potatoes are just the thing.

DietDitch Note: baking a potato is a bit like drying fruit – it takes much of the moisture out and in turn, sugars are intensified so watch your portion control.

For 4 servings you will need.

  • 4 potatoes, skin on, the size of your fist.
  • ¼ of a cabbage
  • 2 grated carrots
  • 1 red onion
  • Bell peppers
  • 1 can of chili beans – about 14 oz (400gm) can
  • 4 Tbsp organic low fat sour cream or plain yogurt

Method:

Bake potatoes for about an hour in a moderate to hot oven. Wrap them in foil if you want the skin soft.

Make a coleslaw with the cabbage, carrots, bell peppers and onion. This can be dressed with some low fat yogurt if you wish.

Once baked, score a cross in the top of the potatoes not cutting all the way through. Give spuds a slight squeeze from the base to make a perfect nest.

Top potato with coleslaw and heated chili beans. Add a dollop of lite sour cream or plain yogurt and maybe a sprinkle of grated low fat cheese.

Or for a delicious change use sweet potatoes.
