Sweet Potato and Lentil Curry

Kumara is the Maori name for sweet potato. You will see us refer to them by this name throughout our site. So say it with me now – koo- ma- ra. Whatever way you say it,  sweet potatoes are a wonderful food packed with vitamins, minerals, and fibre.

You may find eating spicy food makes you want to eat less afterwards and that can only be a bonus.

For 2 servings you will need:

  • 1  onion
  • 2  cloves garlic
  • 1  tsp curry powder
  • 1  tsp cumin
  • 1  tsp turmeric
  • 1  tsp cinnamon
  • 1 cup kumara / sweet potato, diced
  • 1  cup of water
  • 1  can of tomatoes (Indian flavour if available)
  • 1  can of lentils – rinsed and drained
  • ¼  cup light coconut milk
  • Coriander, finely chopped
  • Salt and pepper to taste

Method:

Saute the onion in a small amount of olive oil in a large pan or wok. Add crushed garlic and continue cooking until onions are translucent.

Add all spices stirring into the onions so they cook, followed by the kumara. Add the water to de-glaze the pan.

Simmer kumara until soft adding more water if needed. Add in the lentils and tomatoes and simmer until thick.

Then add the coconut milk, gently bring back to the simmer and season with salt and pepper to taste.

Sprinkle with coriander and serve over freshly cooked basmati rice.

DietDitch Tip

We have used canned lentils for this recipe because they are quick and easy but of course feel free to use lentils you have prepared yourself if you prefer. You will find their cooking instructions on the back of the packet.
